β-Glucuronidase
Description:
β-Glucuronidase (β-GC) is widely present in animals, plants, microorganisms, and cultured cells, catalyzing the hydrolysis of β-glycosidic bonds and serving various physiological functions. In cellulose saccharification, β-GC further hydrolyzes cellobiose and cellulose oligosaccharides into glucose. It also hydrolyzes terpene aroma precursors, converting glycosidically bound forms into free forms to produce fragrance. Additionally, β-GC can hydrolyze prunasin in plants, releasing HCN to deter insect feeding.
