Pepsin
Description:
Pepsin is a digestive protease secreted by the gastric chief cells in the stomach mucosa, which functions to break down proteins in food into smaller peptide fragments. Chief cells secrete pepsinogen, which is then converted into pepsin through activation by stomach acid or existing pepsin. Pepsin is not directly produced by the cells.

Identification: When a water solution of this product is mixed with tannic acid, gallic acid, or most heavy metal salts, a precipitate forms.
Drying Loss Check: Dry at 100℃ for 4 hours, with weight loss not exceeding 5.0% (Appendix VIII L).
Activity Assay: Preparation of reference solution—accurately weigh tyrosine dried to a constant weight at 105℃, and dissolve it in hydrochloric acid solution (1 mol/L HCl solution 65 ml diluted to 1000 ml with water) to prepare a solution containing 0.5 mg per ml.
