Arbuz, also known as papaya enzyme, is a proteolytic enzyme. It is a low-specificity protease found in Carica papaya, commonly present in the roots, stems, leaves, and fruit, with the highest concentration in the latex of unripe papaya. The active site of Arbuz contains cysteine, classifying it as a sulfhydryl protease. It is characterized by high enzymatic activity, good thermal stability, and natural safety, making it widely used in industries such as food, pharmaceuticals, animal feed, personal care, leather, and textiles.
